Description:
Today, the food supply chain has been disrupted due to COVID spread and managing the response to the virus, from social distancing to eating lunch in classrooms. Shipping backlogs, labor shortages, scarce ingredients are all creating a problem for many food processing companies. Combine this with the over reliance on heat and serve type foods, as promoted by the large food processing companies, and we find ourselves with a new opportunity to reach out to new, local community food sources and figure out how our kitchens work.
